I've seen other pizza steels out there. Why choose ScratchMadePizza?
In principle, the thermal properties of a similar carbon steel (6mm) will still yield great results, but it's the production process that sets ScratchMadeSteel apart. Other steels (on the market) can be full of contaminants and do not go through a rigorous process of shot-blasting and burnishing to remove mill scale, rust and properly clean the material for food-grade use. As a result they can be dangerous, display a dull or matte finish and will also often show scratches from the production process. ScratchMadeSteel also comes pre-primed (UK beeswax) to ensure proper protection and longevity, whereas cheaper options often do not.
I noticed that your baking / pizza steel is carbon-based but I've seen others made of different types of steel? What's the difference?
Carbon steel is a much more effective material for heat retention and conductivity compared to something like stainless, which offers only 1/3 the performance in comparison. This allows you to cook pizza and bread much faster and will also out-perform other materials when cooking multiple items one after another.

My steel has slowly darkened - is this normal?
Over time your baking steel will darken in colour and develop a 'patina' that will actually help to protect it. This is normal - and unavoidable, but the cutting-edge laser etching process of the ScratchMadePizza logo means that it will always be visible even after years of use, compared to other brands on the market.

Why is it so heavy?
The ScratchMadePizza signature baking steel is 6mm thick, weighing in at 6.1kg. Other providers offer even thicker sizes (up to 10kg) but I personally believe 6mm to be the best balance of heat retention, transfer and recharge time. It's the only size I'll ever use!

My steel has rusted! What do I do?
A properly seasoned baking steel will never rust, but if you do encounter any then simply use an abrasive scourer to remove any imperfections and then clean, dry and re-season with oil. Choose the best oil for you that has a high smoke point such as sunflower. See the guide for more details.
