Additional Equipment
20cm loose based non-stick sandwich / cake tin
Dough
140g strong white bread flour
95ml water
4.5g salt
6g instant yeast
1tbsp olive oil
1tsp sugar
Fillings
175g shredded mozzarella
200ml pizza sauce
25-30g pepperoni
sprinkle Parmesan cheese
pinch chilli flakes
handful fresh basil

Instructions
Knead your dough on a floured surface for five minutes and then cover and leave to prove for 1.5hrs at room temperature.
Preheat your carbon baking steel on the middle oven shelf at 230c for at least 20 minutes.
Roll out your dough (slightly larger than the base of your pan or cast iron skillet).
Brush the inside of your pan with plenty of olive oil. This helps to 'fry' the crust and also prevents sticking.
Lay your dough into the pan and drape slightly over the top edges to help keep its shape.
Add your cheese first, followed by the pepperoni (or other fillings) and finally the tomato pizza sauce.
Trim any excess dough around the top edge.

Bake for 25 minutes at 230c, then allow to cool for 10 minutes before carefully removing from the pan.
Finish with grated Parmesan, chilli flakes and fresh basil.
