Detroit Style Pan Pizza Recipe

This Detroit-style pepperoni pizza is the ultimate combination of crispy, caramelised edges, a soft and airy crust, and a delicious cheese crown packed with flavour. Making the most of your carbon baking steel - which delivers incredible heat for that signature golden, crunchy finish. A perfect sharing pizza for friends and family, right from your home oven.


PREP TIME: 5 minutes BAKE TIME: 13 minutes DOUGH FERMENT: 24hrs

Additional Equipment

  • 20x25cm Detroit style pizza pan, non-stick


Dough

  • 170g 00 flour

  • 120ml water

  • 5g salt

  • 0.25g fresh yeast / 0.1 instant (you can use a dough calculator app for accurate quantities based on your room temperature)


Toppings

  • 200g shredded mozzarella

  • 200ml pizza sauce

  • handful pepperoni

  • 1 sliced green chilli

  • handful fresh basil


Instructions

  1. Work your dough until smooth (5-10 mins), then prove in a covered, oiled pan (Detroit 20x25cm) for 24hrs, stretching it to the corners at the 20hr mark.

  1. Preheat your carbon baking steel on the middle oven shelf at maximum temperature for at least 20 minutes.

  2. Dimple your dough with olive oil, then par-bake for 8 minutes.

  3. Add your cheese and bake for a final 5 minutes.

  4. Carefully release the cheese crown using a sharp knife around the edges, then allow to cool for 5 minutes. Remove from the pan.

  5. Finish with your favourite toppings (you can warm the pizza sauce and pan-fry the pepperoni and green chilli).

  6. This combination also works really nicely with some chilli flakes and hot honey!
