Toppings
125g Italian Ricotta cheese
handful spinach
1 garlic clove
pinch cracked black pepper
40g mozzarella
4 slices Spianata Piccante
1 sliced green chilli
Instructions
Preheat your carbon baking steel on the top oven shelf at maximum temperature for at least 20 minutes.
Finely slice your garlic and pan-fry on a medium-high heat for 30 seconds, then mix in the ricotta, spinach and cracked black pepper. Stir until combined (1-2mins).

Stretch your dough to roughly 30cm and press the air all the way out of one side to form a flat base.
Add your Ricotta mix into one half, then fold it over to create a sealed pocket.
Spread your tomato and cheese on the other half along with the remaining ingredients.
Poke a few small holes in the calzone half, then brush lightly with extra virgin olive oil.

Dust your peel with semolina and launch directly onto your baking steel. Bake for around 5 minutes (starting with the grill on) and turning halfway through.
