Toppings
150g mini mozzarella pearls
2tbsp pizza sauce
10 slices pepperoni
1 red or green chilli
handful fresh basil
pinch cracked black pepper
Instructions
Preheat your carbon baking steel on the top oven shelf at maximum temperature for at least 20 minutes.
Drain your mozzarella pearls and finely slice your chilli (remove seeds if desired).
Stretch your pizza dough out by hand to your preferred size (about 33cm) pushing the air all the way out of the edge. Finish with a rolling pin to ensure an even shape and thickness.

Start by making 5cm incisions (with a pair of scissors or sharp knife) into the edges of the dough at: north, south, east and west - followed by 4 additional cuts in-between those points.
Add your chilli and mozzarella into the sections, then brush the outermost edges with water and fold inwards, towards each other, then pinch to seal.

Add the pizza sauce and remaining toppings into the middle of the pizza and carefully transfer onto your peel using plenty of semolina (if it sticks to the countertop).
Bake for around 5 minutes (starting with the grill on) and turning halfway through.

Mix it up by filling the tips with even hotter mixed chillies (for a fun game of pizza roulette) or cherry tomatoes, 'nduja or even try a sweet version with chocolate or marshmallow!
